A vitamin C claim needs a number you can dose against and declare. Neither fruit gets you there on romance — both need a standardized grade with the assay stated per batch. Once that is settled, the decision comes down to sensory impact, cost-in-use and what the ingredient does for your label.

Choose acerola when consistency and cost-in-use decide
Acerola standardized to 17% vitamin C gives a predictable input: you dose against a fixed assay, the flavor rarely fights the rest of the formula, and the supply base is mature. It is the default for high-volume vitamin C fortification — and the reason it dominates immune-support supplements and effervescent tablets. Choose camu camu when differentiation is the point
Camu camu carries an origin story acerola does not: an Amazonian fruit with one of the highest natural vitamin C concentrations known. For a premium SKU where the ingredient is the marketing, that matters. Budget for the tartness in your flavor system, and confirm the vitamin C grade before you build the label claim. Or use both
A common approach: acerola for the bulk of the vitamin C load, camu camu at a lower inclusion for the front-of-pack story. You get dosing consistency and differentiation without paying premium pricing across the whole formulation.
What about synthetic ascorbic acid?
Synthetic ascorbic acid is cheaper per unit of vitamin C and always will be. The reason brands move to fruit sources is the label and the clean-label positioning, not the chemistry. - Assay per batch on the COA, with the method stated (titration, USP).
