What is the difference in composition?
Freeze-dried (lyophilized) açaí powder is produced by freezing açaí pulp and removing the water by sublimation under vacuum, at low temperature. Nothing is added: the powder is 100% fruit, preserving the anthocyanins, polyphenols and healthy fats that make açaí valuable. Spray-dried açaí powder is produced by atomizing açaí juice into a hot air chamber; because pure açaí is high in fat and sugars, a carrier — in our case about 20% cassava (tapioca) maltodextrin, a clean-label, gluten-free starch — is required for the powder to flow and remain stable.
How do they compare in practice?
| Parameter | Freeze-dried | Spray-dried |
|---|---|---|
| Composition | 100% açaí fruit | ~80% açaí + ~20% cassava maltodextrin |
| Color | Deep purple, closest to fresh fruit | Lighter purple |
| Flavor | Intense, full açaí profile | Milder |
| Water solubility | Moderate (fat content) | High — disperses easily in liquids |
| Cost-in-use | Higher | Lower |
| Shelf life | 24 months | 24 months |
| Typical MOQ (New Açaí Amazonas) | 10 kg | 25 kg |
| Best applications | Supplements (capsules, gummies), açaí bowls, bars, premium smoothie mixes, cosmetics | RTD & instant beverages, dairy and plant-based drinks, sachets, confectionery, high-volume blends |
Which should you choose?
Start from the claim on your label and your cost target. If the product says "100% fruit", is positioned premium, or needs maximum antioxidant content per gram, choose freeze-dried açaí powder. If the powder must dissolve instantly in a beverage line, or cost-in-use decides the business case, choose spray-dried açaí powder. Many manufacturers use both across a product family. There is also a third full-fruit option with a different drying profile: evaporated (RWD) açaí powder.
