What is the difference in composition?

Freeze-dried (lyophilized) açaí powder is produced by freezing açaí pulp and removing the water by sublimation under vacuum, at low temperature. Nothing is added: the powder is 100% fruit, preserving the anthocyanins, polyphenols and healthy fats that make açaí valuable. Spray-dried açaí powder is produced by atomizing açaí juice into a hot air chamber; because pure açaí is high in fat and sugars, a carrier — in our case about 20% cassava (tapioca) maltodextrin, a clean-label, gluten-free starch — is required for the powder to flow and remain stable.
